In 2023, a small but ambitious café opened on Fausta Road in the heart of Malolos, Bulacan. It arrived with a clear intention: to create a space that felt like both a discovery and a homecoming for the growing community of coffee-minded locals, busy students from nearby campuses, and freelancers looking for a reliable spot to think.
The name is pronounced "my-ard" — just as its founders note in their Instagram bio. A nod to the French chemist Louis-Camille Maillard, who first described the reaction in 1912. It is a name that carries weight, but wears it lightly.
Every item on the menu is designed to explore the complexity of taste. From the richness of truffle in the pasta to the gentle tang of the Taho Latte, the food and drink at Maillard is about transformation — taking familiar ingredients and elevating them with intention and craft.
